Good morning, friends! How is your week so far? I have a tasty recipe to share that I think will be perfect for upcoming Superbowl parties, but thought I would start things off with a quick recap of where my life has been lately!
After what has felt like endless hours on job boards, tweaking and re-tweaking my resume, several interviews and a few let downs later, I am SO excited to share that I have officially accepted an offer for a position as a Western NY brand ambassador for adidas!
My new position will mainly be comprised of marketing, visual merchandising and retail. I will be responsible for 3-5 stores in the western NY territory to be the brand expert and advocate for all things adidas. 🙂 I will also be working remotely to report to headquarters on how certain products are doing in the area – what’s selling and what’s not, what’s hot and what’s not, so on and so forth. Training will begin on February 8th for a virtual portion and then the following week I will be heading out to Portland for in-person training at adidas HQ! Holy moly!!! I am so stunned and so grateful for this opportunity and cannot wait to begin!
I ironically signed my offer letter the same day that I went in to work my last shift at lululemon and the timing truly couldn’t have worked out any better. I loved every minute of my time spent at lululemon and am so thankful for the opportunity to have worked alongside some wonderful people this holiday season. I still plan on popping in quite a bit to catch up with everyone and hope to potentially return next holiday season to help out with another round of seasonal craziness!
Finally, I wanted to thank you all so, so much for the well wishes during these last few months of uncertainty. It is so empowering to have people in your court and cheering you on in those moments that you feel so lost and discouraged. Your support really means the world! THANK YOU!
Healthy Baked Mozzarella Sticks
Before things get too sappy up in here, let’s get movin’ on to the cheesy goodness!
I dug this recipe out from my college days when I had first started playing around in the kitchen and altering some of my favorite foods in hopes of making them a bit healthier. Rather than being deep fried, these mozzarella sticks are baked and only consist of two ingredients – egg roll wrappers and string cheese! Now that I think about it, I’m not sure if they can even be considered a recipe because they’re just that simple.
Egg roll wrappers can typically be found in the refrigerated produce section of most grocery stores. The brand I picked up was called Melissa’s and had 80 calories per wrap (16g carb, 0g fat, 3g protein). I opted to use Wegman’s store brand of low-fat mozzarella string cheese, which had 70 calories per string (1g carb, 4g fat, 8g protein). For sauce, I used a jar of Newman’s Own traditional marinara that I had kickin’ around in the fridge – feel free to use your choice of sauce for dipping!
- Egg roll wrappers
- Low-fat mozzarella string cheese
- Marinara sauce (or your dipping sauce of choice)
Yep, that’s it.
- Preheat oven to 400F. Lightly spray a baking sheet with olive oil before setting aside.
- Begin assembling mozzarella sticks by placing a cheese stick about 1 inch from the edge of a wrap, fold the sides in, and roll up as tightly as possible. Place the seam side down on the baking sheet.
- Spray a light mist of olive oil to coat the sticks.
- Bake for 10 to 12 minutes. Remove tray from oven to flip over the sticks.
- Return to oven and bake for about 3-5 additional minutes, or until golden brown. (I left mine in a smidgen too long and some of the cheese busted out of a few of them. They were still just as delicious!)
- Remove from oven and let cool for a few minutes before digging in!
